Crispy Cauliflower Tacos with a Sweet and Spicy Brussel Sprout Slaw

Have you ever watch @hotforfoodRECIPE?! Videos? That's pretty much me on a daily basis 😅 I have like a bunch of random things in my fridge that I impulsively buy with no plans or meal ideas. Bad right?

This is what I had in my fridge that I want to get rid of because it was going bad: cauliflower florets, corn tortillas, brussel sprouts, and some romaine lettuce. I could have made a roasted veggie salad and tortilla strips, but I wanted something more comforting and I was kind of craving a taco. I mean when you have tortillas, you have to make tacos!

For these tacos, I seasoned them with tons of garlic powder and a bit of paprika and salt, then shallow fried them. For the brussel sprouts, I like to shave them nice and thin so they crispy while sautéing them. Season it with a bit of maple syrup, apple cider vinegar, chili flakes, and s&p. Add the some spicy mayo to the mix and it's all good to go! Toss in some romaine because why not! So easy and soooooooo good!
Recipe: 4 Servings Time: 1 hour Ingredients for Cauliflower florets: ☑️1 cauliflower head, cut into florets
☑️1 cup of flour
☑️2/3 cup of mineral water
☑️1/2 cup of coconut/cooking oil
☑️2 tbsp of: garlic powder and onion powder
☑️1 tbsp of smoked paprika
☑️1 tsp of: salt, pepper, and chili powder
☑️6-8 small corn tortillas
Ingredients for Brussel Sprout Slaw:
☑️1 cup of shaved brussel sprouts
☑️2 cloves of garlic, minced
☑️3 tbsp of vegan mayo
☑️1 tbsp of: maple syrup, Sriracha
☑️1 tsp of: chili flakes, apple cider vinegar ☑️1/2 tsp of Salt and Pepper 1. Heat up oil in a pan on medium heat.
2. While oil is heating, mix flour, garlic, onion, paprika, chili, salt, and pepper. Add in mineral water last and do not over mix
3. Dip the florets in the batter and fully coat them. Tap off any excess before placing them in the hot oil. 4. Let the cauliflower florets cook on each side for two minutes or until golden, place on a paper towel lined dish to drain excess oil.
5. After cooking all the cauliflower, use the same pan and cooking oil to sauté the brussels sprouts and garlic. 6. After letting them sweat for about a minute, add the maple syrup, apple cider vinegar, chili flakes, salt and pepper to the pan. Stir them in and cook for about 3 minutes.
7. In a separate bowl, combine the mayo and Sriracha to make spicy mayo. 8. Combine the brussel sprouts with the spicy mayo. 9. Heat up corn tortillas on a pan. 10. Assemble tacos: Tortillas, cauliflower, slaw, and any other toppings like guacamole or some sesame seeds.
