Sweet Potato Shepherd's Pie

Mini vegan sweet potato shepherd's pie!!!

This recipe beyond easy and so delicious that I ate both of these with in 15 minutes of taking the photo! The base of these pies were mushrooms, which I used to HATE but have began developing taste buds for them--- YOUR GIRL IS FINALLY GROWING!🎉 I notice that as long as I brown them and add a good amount of garlic, they aren't too bad!

Ingredients I used were:

Sweet Potatoes on Top:

- 2 large Sweet Potatoes peeled and boiled

- 2 tbls. of vegan butter

- 1/3 cup of unsweetened original almond milk

- 1/4 tsp. of: salt, paprika, garlic powder

Veggie Blend on the bottom:

- 2 cups of sliced crimini mushroom

- 3 cloves of minced garlic

- 1/2 small onion, chopped

- 1 cup of chopped: carrots, celery

- 1 tsp of: thyme, oregano,

- 1/2 tsp of: salt, pepper, chili flakes

- 1/3 cup of veggie broth

- 2 tbls. of vegan butter

Directions: - Stir fry veggies with the butter

- Mash all the the ingredients for the top

- line the dish with butter, lay the stir fry veggies on the bottom then layer the mash on top

- put under the broiler until golden on top
