Tofu "Egg" and Tomato: A taste of my childhood.

Many people grew up with waffles and pancakes for breakfast. However, I grew up with salty egg and tomato stir fry with rice. As a vegan and no longer a vegetarian, I can't have this dish with the traditional eggs in it. I substitute it with tofu and nutritional yeast instead!

You can make it with a creamy tofu scramble or with cubed firm tofu as long as you have the main sauce (Maggi) and shallots.
