If you have Kimchi, you have to make Kimchi Fried Rice

If you saw my last blog post, you would know that I just found the best vegan kimchi! My favorite thing to do with kimchi is put it in my fried rice! It's easy to make and help you clear out the fridge too! Fried rice is a dish people made to get eat up old food and leftovers. It is so versatile and a classic comfort food. I first had kimchi fried rice at a local Korean restaurant in San Diego, CA. Of course, it wasn't vegan. It had eggs, spam, pork belly, shaved beef, fish flakes, and so much more animal products. It was delicious, but so heavy and loaded with different flavors and textures. I prefer my kimchi fried rice to be more simple and VEGAN! My version includes - Brown rice
- Extra firm tofu (cubed)
- King's Spicy Kimchi
- Soy sauce
- Sesame oil
- Green onion
- Fried onion
- Toasted black sesame seeds
*Tip*
Toss in only half of the kimchi while cooking it in the rice. Leave them in the bigger chunks. Dice the rest of the kimchi in smaller bites and garish after plating. This makes the rice less "wet" and allows you to fully enjoy the kimchi flavor.
