My Favorite Vegan Kimchi

If you don't know what kimchi is, you're living under a rock! It is a stable Korean side dish made of fermented vegetables like cabbage, cucumber, and radish. These veggies sit in a brine consisting of chili paste, salt, garlic, and ginger. There are a variety of kimchi styles and I find all absolutely delicious. I love to eat as a side dish as well as incorporating them in main course like fried rice or soup. It adds so much flavor and texture to a meal while making sure you get your daily dose of probiotics!
There are so many different types kimchi, but there are so many that contain non-vegan ingredients like fish. When I go to my local Korean grocery store, the aisles are lined with Kimchi that aren't vegan.
I have been craving kimchi and needed some help to find the best vegan option. This lead me to ask the good ole' Instagram for some suggestions. I looked up the #vegankimchi and ask tons of vegan foodies about their favorite kimchi. This then brought me to King's Kimchi!
I have tried both mild and spicy versions of their Kimchi and prefer the Spicy one by far. I find that King's Kimchi tends to be one the less spicy than typical kimchi and the Spicy one does have more flavor versus just tang. The ingredients include:
- Nappa Cabbage
- Garlic
- Green Onion
- Hot Pepper
- Sugar
- Salt
- Paprika
- Ginger
**ITS ALSO GLUTEN FREE**
The cabbage in the kimchi are sized well, no more than 2in.x 2in.. The cabbage is crunchy and refreshing with subtle hints of garlic and ginger. It has a nice tang like any pickled vegetable and about a 3.5-4.5 out of 10 for the level of spiciness.
I found this at my local's Whole Foods for $5.99, but I have also come across it at the infamous Grocery Outlet for $3.99.
