Grilled Tofu Marinade For Spring Rolls

Grilled tofu spring rolls for lunch! I grew up eating spring rolls which usually are made with shrimp and pork. I see recipes all over the web that are so complicated when spring rolls should be simple and easy! They should highlight of protein of some sort, fresh herbs, in a dipping sauce that is it!

For the spring rolls I made today, I have the basics: vermicelli rice noodles, rice paper (I used the smaller round sheets), fresh herbs (I opted for Green onions), pickled carrots, and marinated grilled tofu (marinade recipe listed below) as my choice of protein. And as for dipping sauce, I had a peanut vinaigrette and also a vegan "fish sauce".

Recipe for tofu marinade: ☑️ 1 brick of extra firm tofu (enough for 12 mini rolls) ☑️ 1 cup of soy sauce ☑️ 1 cup of maple syrup
☑️1/4 cup of water ☑️ 2 crushed cloves of garlic ☑️ 1 tbsp of: lemon juice or apple cider/rice vinegar, and toasted sesame seeds ☑️ 1 tsp of : cayenne, paprika, sesame oil
☑️ pinch of salt and pepper 1. Remove tofu from package and try to get it as dry as possible. You can gently squeeze it or use paper towels. 2. In a small sauce pan, add in the soy sauce, maple syrup, water, garlic, sesame oil, and the lemon juice/ vinegar. 3. Once it starts simmering, add in the other ingredients: sesame seeds, cayenne, paprika, salt and pepper. Make sure all ingredients are well combined, then set in an airtight container ( large enough for the tofu brick) let it cool with top off. 4. Once the marinade has cooled, place the tofu inside the container, put on the Or top, and let it marinade in the fridge overnight. You can grill it served in spring rolls or just with rice and fresh herbs!
