Oven Baked Delicata Squash Rings

It is that time of year when you see pumpkins everywhere and different types of squash in every grocery store. When you see the squash, recipes linked to them are all the same: they have to do with roasting and maple syrup. But I wanted to do something a bit different.

I saw a lot of roasted or maple recipes using this squash, DELICATA, and I just wanted to try something different that was easy, simple, and savory. So squash rings it was, plus I was also craving onion rings at the time too, which was the real influence to this recipe.

Onion rings are always hit the right spot. Comforting but often greasy with onion lingering on all your finger tips and around the edges of your lips. I wanted to bake them instead. It was just as crispy and delicious without all the excess oil. I paired it with white rice, stir fry kale (spy sauce, onions, cayenne) , and spicy vegan mayo (vegan mayo and Sriracha)
Recipe: 2-3 servings Ingredients:
☑️1 delicada squash (Mine was approx. 7inches long) ☑️ 3 cups of bread crumbs ☑️1 cups of flour ☑️3/4 cups of rice milk
☑️1 tbls of: garlic, salt, sunflower oil ☑️1/2 tbls of: onion powder, oregano, nutritional yeast
☑️1 tsp of: black pepper, paprika, cayenne 1. Start off by washing and drying your squash. Slice the ends off of and hollow out the insides/take out all the seeds. Then slice them a 1/6 inch thick. * you can peel the skins but I left them on. 2. In a bowl, combine all dry ingredients besides breadcrumbs (put them in a separate bowl). Once all dry ingredients are well combine, add in the rice milk and oil. It should be slightly thinner than a pancake batter *If too thick add more rice milk or water 3. One by one, place the rings first in the flour mixture then into the breadcrumbs. Make sure everything is well coated. place on the wired rack over baking sheet. Spray them with your choice of oil, I recommend coconut oil. * you can also bake it on a greased baking sheet, just make sure to flip and rotate often. *For this recipe it fills up to 9 x 12 sheets. 4. Bake in a preheated oven at 425F for 35-45 minutes.
