“Cheese" Quesadilla

I’m pretty sure every one has had or made a quesadilla. This one happens to be vegan with some vegan cheddar cheese. I like to use a blend of Daiya Cheddar Cheese and Trader Joe’s Vegan Mozzarella so it would be extra cheese like!


Ingredients I used for the 2 quesadilla:
☑️two large wheat tortillas from Trader Joe's
☑️1/2 cup of daiya cheddar shreds ☑️1/3 cup of Trader Joe's vegan mozzarella
☑️two pearl tomatoes diced-approx.1/3 cup ☑️one small yellow onion diced- approx. 1/3 cup ☑️1/2 tsp of: garlic powder, paprika, and chili powder
1. In a hot pan, add a teaspoon of vegetable oil.
2. Once hot, add in the diced onions. Let the onions sweat and turn golden. 2. In a medium size mixing bowl, add in the onions, tomatoes, both cheeses, and all the spices then mix. 3. In a medium heat George foreman grill or on that pan, place the tortillas side-by-side. Once hot, Put the cheese mixture on half of each tortilla, Then fold the tortilla in half and close the grill. Let it cook for about 5 to 10 minutes. Then it's ready to eat! *I paired my quesadillas with home made guacamole, Tapitio hot sauce, and some "Parmesan" (raw cashew and nutritional yeast ground in a food processor)
