Roasted Potato Hash

This potato has is perfect for breakfast, brunch, lunch, side for dinner, and why not for dessert too! It is so darn simple to make so why not?!

I remember going to breakfast joints back in the day and getting a hash that usually loaded with corned beef or some meat of some sort. Not in the case! I wanted to make something easy to throw together in the morning that was both filling and delicious. What's great about this recipe is that you can add in more ingredients if you want like meatless sausage or soy chorizo or tons more veggies like mushrooms.

Recipe: 2 servings
☑️ 2 russet potatoes
☑️1 red and green bell pepper
☑️1 yellow onion ☑️ 1 tbls of: oil, salt, pepper, and paprika to taster 1. Mince all vegetables 2. With a pan on medium heat and a table spoon of cooking oil, start off by sweating the onions. just before they get golden, throw in potatoes then cover with a lid so potatoes can cook approx 10mins and toss mid way 3. Once the potatoes have soften a bit, take off the lid, add the peppers then seasoning, and let the browning begin. You want the potatoes to get crispy so let it sit for three minutes on each side and toss until the hash is all golden.
