Loaded Potato Wedges

Once of a past favorite fast food dishes were at KFC, specially their potato wedges dipped in their buttermilk ranch, but of course, that isn’t vegan! I had a craving for some comfort food as per usual and found some red potatoes in the corner on my kitchen counter top. I didn’t want to just bake or roast them with some salt and pepper, but do some thing more fun and “fast food” like. So loaded potato wedges it was!

Vegan or not, potatoes are a house hold stable, but a classic baked potato can get boring to eat from time to time. Why not make them into wedges and toss tons of goodies on top of them?! Yes, it takes a little bit more effort, but cutting potatoes isn’t too rough.

You can fry the wedges, but I like to bake them. It keeps them crispy without all the extra oil. Plus it makes you feel better after you eat them so why not!

I prefer mine well-done with slightly burnt edges so you really get the crunch!

Ingredients:

☑️6 small red potatoes or Enough Potatoes to fill up a large 12x9 baking sheet ☑️2 cups of diced onions ☑️1tbsp of each: salt, pepper, garlic powder, onion powder, oregano, smoked paprika. ☑️2 tbsp coconut oil *spray easier* ☑️Toppings I used: 1/3 cup of shredded daiya cheddar cheese, one small avocado-diced, one pearl cocktail tomato-no seeds/diced, three tbsp of chopped green onion

1. Preheat the oven to 425F.

2.Place potatoes in a pot with enough water to cover it. Put it on the stove on medium heat. Let it boil until potatoes are soft enough that you can easily poke a fork in it-approx 10-15minutes.

3. Then sliced it up into evenly sized wedges.*the thicker=the longer it needs to roast* I made mine no more then a 1/3 of an inch thick.

3. Coat them with the oil and a dash of salt and pepper then evenly spread them on a well oiled baking sheet.

4. Let them cook in the oven for 15 minutes then add the rest of the seasoning, toss in the onions, and flip the wedges so all sides gets crispy. Leave it in the oven for another fifteen minutes.

5. Give the wedges another toss and add the cheese, let it melt in the oven for about five minutes.

6. Once melted, take it out of the oven and add on your toppings!
